  • 1 cup shredded lettuce
  • 1/2 cup shredded white cabbage
  • 1 spring onion, finely chopped
  • 1/2 large carrot grated
  • 1/2 handful chopped coriander
  • 1/4 diced avocado
  • 1 cup cooked planted.chicken (shredded)
  • 10 peanuts, coarsely chopped, for garnish

Light Sesame Ginger Dressing

Ingredients

  • 1 tablespoon sesame oil
  • 1/2 teaspoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 tablespoon maple syrup
  • 1/2 tablespoon sesame seeds
  • 2 cm fresh ginger, peeled and finely grated

  1. Cook the planted.chicken according to the instructions on the packet, chop and leave to cool
  2. In a large bowl, combine the remaining salad ingredients and toss
  3. In a small bowl, combine all the ingredients for the salad dressing and whisk together
  4. Add the shredded chicken and mix the salad with the dressing or leave the dressing in the separate bowl
  5. Sprinkle with chopped peanuts
