Lime marinade: Finely chop the chilli and lemongrass, add olive oil, a little lime zest and juice. Mix everything and add salt
Sesame-chili crumble: Slowly roast a part of the sesame seeds without fat, add salt and chili.
Chicken: Marinate the planted.chicken with some of the lime marinade and half of the chili flakes. Let rest for 20 minutes. Thread the pieces onto skewers, with a few lime slices between the chicken pieces.
Grill: On a grill that is not too hot, cook the planted.chicken skewers, brush again with marinade. Cook for 2 minutes on each side.
Serve: Remove the skewers from the grill and brush again with marinade. Garnish the skewers with the pickled ginger, spring onions, some fresh lime zest and the rest of the sesame chilli crumble.
