Alicia (lellisch.veganfood) lives in Bavaria and studies industrial design. In May 2020, she started her food blog on Instagram. She wants to inspire and show how easy and delicious vegan cooking and eating is.

This goes in

  • 300 g planted.chicken nature
  • 1 red onion
  • 450 g frozen spinach 
  • 3 tomatoes
  • 3 nectarines
  • 1 cup lentils
  • 250 ml water
  • 500 ml oat cream
  • 2 tablespoons coconut oil
  • 3 bay leaves
  • some fresh coriander

Curry paste

Ingredients

  • 1 teaspoon cumin
  • 1 tsp curry powder
  • 4 cloves
  • 2 tsp paprika powder
  • ½ tsp turmeric
  • 1 ½ tsp salt
  • 1 pinch of cinnamon

Preparation

  1. Dice the onion and sauté in a pan with 1 tbsp coconut oil. Wash the lentils well, add to the onion and fry briefly. Deglaze with water.
  2. Roughly dice the nectarines and tomatoes. Add the nectarines, tomatoes and spinach to the pan. Add the cooking cream and bay leaves and simmer for 20 minutes.
  3. Fry the planted.chicken in another pan with coconut oil until it is crispy on all sides.
  4. For the curry paste, mix all the spices with 2 tbsp water and then add to the lentil curry.
  5. Add the planted.chicken to the lentil curry, mix well, top with coriander and enjoy.
