Nenad Mlinarevic is the owner and creative head of the plant-based restaurant Neue Taverne and Bauernschänke in Zurich.

Main ingredients

  • 180 g Planted Limited Edition by Nenad
  • 1 small lettuce
  • Lime, cut into pieces
  • 25 g white sesame seeds, roasted
  • 25 g black sesame seeds, roasted

For the Spicy Mayo:

Ingredients

  • 150 g Vegan Mayo
  • 20 g Yuzu Kosho Paste e.g. Coop Fine Food
  • 1 lime, grated
  • 10 g Sriracha sauce  
  • pinch of salt

For the radish:

Ingredients

  • 1 pc white radish, peeled and finely sliced
  • 3 dl water
  • 1 dl rice vinegar
  • 5 tablespoons sugar  
  • 1 tbsp salt

Preparation

  1. Mix all the ingredients for the Spicy Mayo well and refrigerate.
  2. For the pickled radish, first boil water, rice vinegar, salt and sugar and leave to cool. Then pickle the radish in the pickle stock and refrigerate, best done a day in advance.
  3. Remove the outer unattractive leaves of the lettuce and prepare and wash the beautiful leaves.  
  4. Heat the Planted Limited Edition by Nenad in a frying pan for approx. 3 min. on medium heat.
  5. Mix the white and black sesame seeds and arrange in a bowl.
  6. Arrange all the other ingredients in separate bowls as well. The bowls can now be placed in the centre of the table to share. Use the lettuce leaf as a taco and fill with all the ingredients, and enjoy.
