  • 2-3 lettuce hearts
  • 6 radishes, cleaned and freed from leaves
  • 1 avocado
  • 1 spring onion
  • 3 tablespoons pine nuts
  • A handful of croutons (bought or homemade)

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon whole grain mustard
  • 1 tablespoon of mayonnaise
  • salt and pepper

Preparation

  1. Whisk the dressing ingredients and season with salt and pepper.
  2. Cut the spring onion and radish into thin slices and set aside.
