Nenad Mlinarevic is the owner and creative head of the plant-based restaurant Neue Taverne and Bauernschänke in Zurich.

This goes in

  • 100 g glass noodles
  • 200 g planted.chicken Limited Edition by Nenad
  • 20 ml peanut oil or rapeseed oil
  • 50 g beech mushrooms (mixed)
  • 30 g shitake mushrooms
  • 1 spring onion
  • 40 g bean sprouts
  • 50 ml soy sauce
  • 1 lime
  • 1 bunch coriander
  • pinch of sesame (black, roasted)

Preparation

  1. Pour hot water over glass noodles and let stand for 10 minutes, then drain water and briefly rinse in cold water.  
  2. Heat the peanut oil and fry the mushrooms in it.  
  3. Add the planted.chicken and fry briefly.
  4. Add glass noodles and mix everything well, deglaze with soy sauce and lime juice.  
  5. Add the bean sprouts last so they stay nice and crunchy.
  6. Finely chop the coriander and spring onion.  
  7. Serve.
